Ingredients
2–3 eggs
1 medium potato
1 small onion
Salt — as per taste
Black pepper powder — as per taste
1 teaspoon mixed herbs
1 teaspoon oregano
1–2 tablespoons oil or butter
Process
Peel the potato and cut it into small, thin pieces so that it cooks quickly.
Cut the onion into small pieces.
Heat a pan and add some oil or butter.
Add the onion and cook for a few minutes.
Add the potato pieces and cook them until they become soft and lightly golden.
In a bowl, crack the eggs and whisk them properly.
Add salt, black pepper, mixed herbs, and oregano to the eggs and mix well.
Now take the cooked potato and marinate it in the egg mixture for 30 minutes.
After 30 minutes, heat the pan again and pour the egg and potato mixture into it. Spread it evenly across the pan.
Cook on low to medium heat until the bottom of the omelette is set.
Carefully flip the omelette and cook the other side until the egg is fully cooked and the omelette gets a nice golden colour.
Once done, transfer it to a serving plate.
