Recipe
1. Prepare the vegetables
Cut all the vegetables into thin, roughly 1-inch-long pieces. Keep them aside.
2. Cook the noodles
Bring a pot of water to a boil and add some salt.
Add the noodles. You can add a few drops of oil to the water to help prevent sticking.
Cook the noodles until they are about 80% done. Check them from time to time so they don't become overcooked.
Once they reach about 80%, remove the pot from the heat and keep it covered. The noodles will continue cooking in the hot water.
After a little while, drain the water.
Spread the noodles out on a tray. If needed, toss them gently with a little vegetable oil to prevent them from sticking together.
3. Blanch the vegetables
Bring another pot of water to a boil and add some salt.
Add the prepared vegetables and blanch them for about 5 minutes.
Do not overcook them—the vegetables should remain slightly crisp.
Drain the vegetables and keep them aside.
4. Prepare the stir-fry
Heat some oil in a large pan or wok.
Add the chopped garlic and stir-fry until it becomes light golden.
Add the onion and fry for a little while.
Add the tomatoes and stir-fry until they soften.
Add salt to taste and cook for about 2 minutes.
Add the blanched vegetables and mix well.
Add 1 tablespoon vinegar and 2 tablespoons soy sauce. Stir-fry for about 2 minutes.
Add black pepper, chilli sauce, and tomato sauce according to your taste.
5. Add the noodles
Slowly add the cooked noodles to the pan.
Gently toss and mix everything together, making sure the noodles are evenly coated with the vegetables and sauces.
Cook for another 2–3 minutes.
Taste and adjust the salt, sauces, chilli, or pepper if needed.
Remove from the heat.
6. Serve
Transfer the vegetable noodles to a serving plate. Garnish with some fresh sliced onion and cucumber.
Voila! Your vegetable noodles are ready. Enjoy! 🍜
