Pasta Sauce recipe :
Ingredients:
Tomatoes 6 medium size
Olive oil 2 tbsp
Onion 2 medium size (chopped)
Garlic 10-12 cloves (chopped)
2 Tsp Red chilli flakes
1 Tbsp Kashmiri Chilli Powder
• Oregano 2 tsp
1 & ½ Tsp Mixed Herbs (Basil, thyme, rosemary)
½ Tsp Black Pepper Powder
2-3 Tbsp Tomato Ketchup / Puree -
1/2 tsp Sugar
Salt - as per taste
Methods:
Dry roast the tomatoes on the direct fire on the gas, immediately transfer to the cold water
Peel the skin and roughly chop them. Transfer the chopped tomatoes to a grinding jar and grind to a fine puree. You can keep the tomatoes little chunky as per your taste.
Set a pan on medium heat, add olive oil, onions and garlic, sauté until onions are translucent.
Add the tomato puree, Kashmiri Chilli Powder, salt & pepper to taste, stir and cook for 8-10 minutes until the sauce thickens.
Add red chilli flakes and oregano and mix herbs, mix well and cook for 2-3 minutes
Cool down the sauce and transfer it to a well sterilized container. You can store it in fridge for 8-10 days and deep freeze it for a month.
Homemade pizza and pasta sauce is ready !!
Pizza Bread
Yeast mixture :
1 cup luke warm milk
2 Tbsp sugar
1 Tbsp Instant dried yeast
Dough :
4 cups flour (for two pizza)
1 tsp Salt
2 Tbsp Milk powder
1 Tbsp garlic powder or Garlic paste
1 Tbsp Soften butter
2 eggs
1Tbsp Vegetable oil during kneading
1 Tbsp butter to oil the crusty plate
Pizza toppings :
1 cup Mozzarella cheese
1 cup cheddar or any other cheese
Oregano, mix herbs and red chili flakes (use as per taste)
Toppings - be creative - use whatever you like (chicken, corn, onion, capsicums, tomatoes)
Preparation:
In a bowl take one cup lukewarm milk add 2 Tbsp sugar and mix. Ensure milk is lukewarm.
Add 1Tbsp Instant dried Yeast, and keep it for 10 mins or till the time yeasts are active.
Add 4 cups of flower, pinch of salt, soften butter, milk powder, 1 Tbsp Garlic powder, 2 eggs, mix it well and make a dough.
First Rest # Rest the dough for minimum 45 mins (or till the time it becomes double in size). Oil the bowl surface before keeping the dough. To cover the bowl use cling wrap or any wet cloth. Keep the bowl in a warm place.
After 45 mins knead the dough for about 8 to 10 mins, till the time it becomes soft.
Second Rest # Put the dough back in the bowl ensure you have greased the bowl with vegetable oil. Keep it for 45 mins or till the time it becomes double in size.
After 45 mins knead the dough for couple of mins.
Greased the Crusty plate with butter/vegetable oil.
Once you begin rolling, it should form the shape of a pizza without hesitation – just be sure you work from the inside out. Using a plastic fork, poke holes across the inside of the crust.
Add pasta sauce, a layer of mozzarella cheese, add toppings of your choice. On top add cheddar cheese or any cheese of your choice.
Bake in preheated 170°C oven for 30 minutes (low rack)
